Day 3: Healthy Homemade Waffles (Vegan and Gluten Free)

I told you, you were in for a treat today. Check out these beautiful waffles. They’re fluffy, moist, packed full of energy, and so delicious. I have to admit I didn’t think I’d like all this gluten free stuff, especially the baking. But so far so good. I thought, why should I ever bake with anything but wheat flour, I mean that’s what regular old flour is. I can’t even pronounce half of these other flours and gums. Why should I cook with them? Well short answer is they don’t contain gluten, and they are all natural products. Yes the texture and flavor is a little different than the typical all purpose wheat flour, but if I didn’t tell you, you wouldn’t know the difference. These waffles are seriously so good, and they fit perfectly into my diet.

These super healthy and delicious waffles are made from all natural and gluten free ingredients that will give you the energy to power through your day.

Ingredients
  • 1½ Cups Gluten Free Pancake Mix (or All Purpose Gluten Free Flour)
  • 1 Cup Almond Milk (or soy milk)
  • 1 Tbs Flax Seed Meal
  • 1 Tbs Vegetable Oil
  • ½ tsp Vanilla Extract
  • ¼ tsp Almond Extract
  • If using All Purpose Flour or All Purpose Gluten Free Flour:
  • add an additional ½ cup of Almond Milk
  • and ¼ cup Sugar or Sugar Substitute
  • ½ tsp Baking Powder

Directions
  1. Whisk flaxseed meal into the almond milk, then whisk that into the pancake mix with the remaining ingredients.
  2. Pour into waffle maker, or cook as pancakes on a hot griddle.
  3. Top with fresh berries and maple syrup.

Now after you eat these yummy homemade waffles you’ll be ready for anything. My hubby and I decided to burn off our added energy at the park playing tennis. It was a great workout, and he beat me :(

After that we were ready for a little snack, so I whipped up a simple smoothie. 6oz of OJ, 2oz Almond Milk, 1/2 cup Raspberries, 1/2 Cup Blackberries, and 1 Cup of Mango = 2 smoothies. Yumm, they were so good! I also tossed in a handful of spinach into mine, if you don’t mind a muddy color it’s not a bad way to sneak in some added nutrients. Another favorite smoothie of mine after an intense workout is just oj, vanilla protein powder, and a banana, that also goes good with spinach if you like… Keep it up!

  1. Does your pancake mix have a leavening agent in it? I made the with the all purpose gig flour am they were extremely dense.

    • Oh yes it does! I’m so sorry, Let me update… If you’re just using the all-purpose flour you’ll need to also add 1/2 tsp baking soda. Sorry Kristin!
