Easy Pumpkin Chip Cookies

Do you love pumpkin chocolate chip cookies as much as I do? I used to go to the store late at night just to pick up a batch -true story- I am so silly sometimes…. Well now that pumpkin is back in season, all I’ve wanted to do is have pumpkin chocolate chip cookies, but alas I haven’t been able to find any around here. Then just last week my mom told me that her dear friend Krysta brought over some delicious pumpkin cookies that she made. She said there were only two ingredients, Pumpkin, and Spice Cake Mix. That’s it! I know you can’t believe it, but it’s true!

We had to try it out for ourselves, and because I love chocolate I threw in mini chocolate chips. Oh my goodness! These were so easy and they turned out great. In fact, I think they tasted better the second day! So go ahead and make these suckers ahead of time, and you and your friends will be so impressed when you walk in to your next get-together with these in hand. Or you can, make these for your kids and have them decorate them for Halloween like I did. Only, I don’t have kids, so those are pictures of my poor decorating skills :P … I think I’ll leave the fancy stuff to Laura.

So that’s it. Super simple, decently healthy, savory and sweet, Pumpkin Chip Cookies!!!

1 can O’ Pumpkin + 1 box O’ Spice Cake Mix + 1 cup O’ Mini Chocolate Chips = Yummy!

3 Ingredients – bake and done – Pumpkin Chocolate Chip Cookies!
Recipe type: Cookies, Holiday
Serves/Makes: 24

  • 1 15oz Can Cooked Pumpkin Puree
  • 1 Box Spice Cake Mix
  • 1 Cup Mini Semi-Sweet Chocolate Chips
  • Frosting / Icing (optional)

  1. Preheat oven to 350 degrees.
  2. Combine the cake mix and pumpkin puree with a mixer, add the chocolate chips, stir, well.
  3. Scoop by Tablespoon fulls onto a greased cookie sheet.
  4. Bake for 10-12 minutes or until a toothpick inserted in the center of a cookie comes out clean.

Decorate with store bought icing, or frost with cream cheese frosting for an added treat :)

  1. I make these all the time, but as muffins – not cookies. These sound great! It will probably make twice as many cookies as muffins (more for me!)
