Easy Treat: Chocolate White Chip Cookies

Whew! Is anyone else’s head spinning with this whirlwind pace that summer is flying by? I have been MIA around here because of so many different functions and what not. But I wanted to share with you this delish cookie recipe that I just baked up smack dab in the middle of this crazy heat wave we’re having here in Minnesota…heat indexes over 105 degrees!! But my girls’ call of “MoOOom, why haven’t you baked us anything lately? We want some cookies!” (Who cares if you could literally bake them on the driveway!), could not go unanswered. Turning on the oven and heating up the house for a bit was definitely worth it for these chocolatey morsels. Here’s the recipe:

Chocolate White Chip Cookies


1 Cup Butter (softened)
1 Cup Brown Sugar
½ Cup Sugar
2 Eggs
2 tsp. Pure Vanilla
2 Cups Flour
2/3 Cups Cocoa Powder
¾ tsp.  Baking Soda
¼ tsp. Salt
2 Cups White Chocolate Chips (only use a high quality white chocolate chip here)


1. Preheat oven to 350° F.

2. Mix the butter, brown sugar, and sugar until light and fluffy in large bowl.  Add in eggs and vanilla,  mixing well.

3. In a separate bowl, combine flour, cocoa, baking soda and salt, and mix together. Then gradually pour those dry ingredients into the wet mixture above at a very slow speed –being careful not to spray or spill.  Stir in white chocolate chips.

4. Form Tbs sized cookie dough balls and place on an ungreased cookie sheet, spaced at least an inch apart.

5. Bake one cookie sheet at a time for 9-10 minutes or until preferred doneness.  Allow to cool on wire rack.

Tip:  Chopped nuts work well in this recipe.  Feel free to add ½ cup of your favorite variety when you add in the white chocolate chips.

Makes:  approx. 4 dozen cookies

These are perfect to whip up in a snap for your kids or to share with family and friends.  I did all of the above and received miles of smiles :)
