Over the past 3 years -since I’ve been married- I’ve gained 50lbs. Being loved so much, having another person to cook for all the time and to go out with to eat, and then graduating from school, and now not working; have all added up to a drastic change in lifestyle for me. The changes have equaled a happier life, but also a much heavier life. It’s time to change all of that! I can be happy and healthy!
To help me -and you- with this lifestyle change, I’ve been coming up with lighter recipes, and ways to control portions. So here’s one of a few mini desserts I’d like to share with you.
Key Lime Pie Mini Dessert in a Cup
1/4 Cup Graham Cracker Crumbs
2 tsp. Honey
1 Container Yoplait Fat Free Key Lime Pie Yogurt
Light or Fat Free Whipped Cream Topping like Redi Whip.
This one is so simple! Microwave cracker crumbs and honey in a bowl for about 10 seconds and then stir together to moisten all of the crumbs. Add about a teaspoon of crumbs to the bottom of 4 shot glasses, press down. Fill the rest of the glasses with yogurt, then top with a small squirt of whipped cream. And there you have a small pie in a cup!
So why does this help me? Well one of my biggest obstacles with living healthy is my love of desserts. I love to have sweets, cookies, pies, and chocolate!!! I seriously feel that I need a dessert everyday. What frustrates me is I can’t remember when that started, I’ve always loved sweets! I remember I used to have a bowl of cereal at night, to substitute something else for dessert, and that was in high school… But this mini key lime pie maybe has a gram of fat, less than 6 grams of sugar, and only 25 calories! That saves me at least 10 grams of fat, 15 grams of sugar, and 100 calories or more over a typical dessert like cookies, ice cream, or a chocolate bar. (Or even that bowl of cereal)
For me, I really need to watch my sweets, because it’s so easy to eat way more than I need. They just kind of melt in your mouth, and before I know it I’ve eaten way too much! All I really need is a few bites to sweeten the pallet, not to add more calories to my diet. These mini desserts, and limiting portions will really help kick start my healthier life style this time, I just need to stick to it!…
…Ok, yeah, you heard me right, ‘this time.’ Those two dreaded words that I’ve heard myself say time and time again. Since Dec. ’09 I’ve been trying to get my health back on track, and have struggled to maintain a healthier lifestyle. I find myself splurging because I crave something rich, or don’t want to cook tonight. Or I think, ‘it’ll be alright just this little piece, just this one time.’ (I’ve got it, I’m a food addict!) My will power is very small when it comes to good food and exercise. But the funny thing is I can be determined and finish just about anything else. In fact, I pushed to get accepted into college, into my major, and pushed through school to graduate. I have endured a lot, but this one silly habit of eating too many sweets has been staring me in the face, and each time I say I’m going to conquer it, I give up. I know that’s not me, and I know I can change. I’m sick of giving up…
So here’s to another shot at trying to lose this extra weight and changing my life! This is just one of many things I need to change, but it is a start! If I can stick with this for more than a month, a year, a lifetime -then I’m conquering yet another big challenge. It’s time to really change this time and change for good… Let’s go!
