I want gooey, I want sticky, I want sweet …Yep, know just the thing! Homemade Caramel Goodness. Okay, it’s Caramel Popcorn but it’s REALLY GOOD!
We were given a bottle of homegrown popcorn kernels a while back by my hubs’ aunt. It was this gorgeous array of colors in a cute little package. The real deal! I was pretty excited to finally pop my own popcorn from scratch instead of tossing a bag of it in the microwave along with the added preservatives. Why eat them if you don’t need to, right? This recipe is so simple for the plain popcorn alone that I may never go back to microwave bags again. No offense, Orville, but my stuff is the ‘pop’ diggity!
The Caramel Corn part of it is super easy too. Maybe too easy…it makes me want to whip up a batch of it way too often. My girls are asking for it daily. I guess that’s a good sign on just how yummy it is but my hips and such aren’t getting any smaller by eating MORE butter and sugar. A girl’s gotta have her happy treats though. Let’s get down to business here so you can make your own caramel goodness.
- 10-12 Cups Popped Popcorn
- 1 Cup Brown Sugar
- ½ Cup Light Corn Syrup
- ½ Cup Butter
- ½ tsp. Baking Soda
- In a medium saucepan, combine brown sugar, light corn syrup, and butter. Allow to melt together and cook over medium heat.
- When it comes to a boil, allow to boil for one minute.
- Remove from heat and stir in baking soda. The caramel will become foamy after adding the baking soda and may expand momentarily so use a watchful eye that it doesn’t overflow the sides of your saucepan.
- Pour over popcorn immediately and stir to combine.
Homemade Caramel Popcorn
Candybar Popcorn=Gooey, sticky, sweet AND chocolatey! All requirements have been met for this round of cravings!

Homemade Popcorn
- ½ Cup Popping Corn
- ¾ tsp. Salt
- 3 Tbs. Oil (Vegetable or Canola works well, coconut tastes best)
- 4 Tbs. Melted Butter
- Popcorn Salt or other popcorn flavorings to taste
- Combine all ingredients in a large, heavy saucepan over medium heat. Stir to combine.
- Place cover on saucepan but leave cracked for steam to escape.
- As saucepan heats up, you will hear the first kernels start to pop. Shake the saucepan several times to keep the kernels and popcorn mixed around.
- Once the popping has almost come to a stop, the popcorn is done.
- Remove saucepan from heat and carefully remove lid as some kernels may continue to pop.
- Pour melted butter over popcorn and/or add other popcorn flavorings if desired.

Does the caramel harden after a while and make it difficult to eat? I tried making caramel popcorn once and the caramel became tough and I couldn’t eat it because it stuck to my teeth so bad!
This is definitely a softer, gooey caramel popcorn but as long as you store it in an air tight container it shouldn’t get hard. Honestly, it has never lasted that long at my house because we eat it so fast so I can’t say if it gets hard after a day or two
