Cheesy Potato Casserole

Just in time for Easter! One of the most requested holiday side dish in our family is Tammy’s Potato Casserole! This super simple dish is so delicious and goes great with any meat and side salads.

Tammy’s Cheesy Potato Casserole

Ingredients

6 to 7 potatoes shredded (or cheat and use frozen hash browns, about 4-5 cups)
1/4 Cup Melted Butter
1 Can Cream of Chicken Soup
1/2 Cup chopped Onions
2 Cups Shredded Cheese (any kind you like. I use a four cheese blend)
2 Cups Sour Cream (don’t use fat free, have to use the real stuff here!)

Directions
Preheat oven to 350 degrees. Mix the soup, 1c. of cheese, butter, and sour cream together. Add the potato and the onion. Place the potato mixture in a greased 9×13 pan and sprinkle the remaining cheese on top. Bake in a 350 degree oven for about 45 minutes, until bubbly. And you can top this with crispy bacon bits and/or diced chives after it’s out of the oven.

Seriously, Tammy has to make 2 batches for the small family gathering, this goes that quickly!

    This sounds exactly like my grandpa corn flake potatoes that I LOVE! the only difference is we used cubed hash brown potatoes and put crushed cornflakes on top of the cheese. Drizzle with 1/2 cup melted butter. Delish!!!!
