I had to arrange another meeting with Guinness. I mean, after all. The first one went so well with the chocolate and me being an Irish girl and all, how could I resist? This time it was with beef!
Irish Beef Stew
I am an avid user of my slow cooker and knew this recipe was a perfect candidate. Between the dark beer and the low and slow temperarture…ladies and gentleman, we have a tender, flavorful winning stew! My oldest daughter chowed down two bowls of the meat alone before I even sat down at the table to eat my bowl of stew, and she’s a picky eater. Definitely a must try recipe for the upcoming St. Patrick’s Day weekend sure to please the family and friends. Or heck, cook it up whenever you have a hankerin’ for some phoenomenal stew!
2 Pounds Lean Beef Stew Meat, cut into 1″ cubes
1/3 Cup Flour
1 Tbs. Seasoned Salt
Pinch Black Pepper
2 Tbs. Olive Oil
1 Med. Onion, chopped
1 Clove Garlic, minced
1 1/2 Cups Guinness (draught, dark beer)
1 Cup Beef Broth
1 Tbs. Worchestershire Sauce
2 Tbs. Tomato Paste
3 Med. Potatoes, diced
2-3 Carrots, chopped
2-3 Celery Stalks, chopped
1 Bay Leaf
1/4-1/2 tsp. Paprika
1/4-1/2 tsp. Dried Thyme
1. Turn slow cooker on to low setting. Spray with cooking spray.
2. Place beef cubes in bowl with flour, seasoned salt, and black pepper. Toss to coat thoroughly.
3. Heat olive oil in large skillet over medium high heat. Add beef and brown on all sides. Stir in onions and garlic. When onions begin to soften, empty skillet ingredients into slow clooker.
4. Deglaze hot pan with 1/2 cup of Guinness, tomato paste, and Worcestershire sauce. Be sure to scrape up bits on bottom of pan. Pour hot liquid into slow cooker.
5. Add remaining ingredients, including potatoes, carrots, celery, bay leaf, paprika, thyme, remaining 1 cup of Guinness and 1 cup of beef broth to slow cooker. Cook on low for 6-8 hours, checking after 6 hours due to variances in slow cookers.
Serve it up with some Irish Soda Bread if you really want to get authentic, as I did. Or even over some Irish Champ -mashed potatoes and green onions. You’ll want something to soak up that wonderful gravy after the yummy bits are gone. Either way, your palate will be pleased!
